Leftover Pork Tacos
When I have any leftover meat, I make tacos. Sometimes, I cook extra food just so that I can make tacos the next day with the leftovers. Well, the other day I made the best roasted pork ever and had enough leftovers to make some awesome tacos de carnitas the next day.
By far, pork is one of my favorite ingredients to add to a taco. I added a little cilantro dressing I had leftover from when I made my awesome Cheese Stuffed Yuca Balls and topped them with a little red onion.
It was the fastest and most delicious meal all made with leftovers! Are tacos awesome or what?
What are the best toppings for pork tacos?
I topped these tacos with a little red onion, fresh jalapenos and cilantro sauce, and finished with a little lime juice for some fresh zing. Pork tacos are really versatile, so you can mix up the toppings with all of your favorites. Try them with:
- Cotija cheese
- Guacamole
- Salsa
- Pico de gallo
- Sour cream
- Fresh cilantro
- Shredded lettuce
- Refried beans
What are the best tortillas to use?
When it comes to tacos, I prefer to use soft corn tortillas or flour rather than hard shells. Corn tortillas have a richer flavor that compliments the fillings and I always get in a mess with hard shells! Corn tortillas are also a healthier option as they contain whole grains and are lower in fat and calories.
You can of course use any tortillas you enjoy the most, they will still taste amazing!
Recipe Notes and Tips
- It’s important to warm your tortillas before adding the filling so that they are soft and pliable and don’t break when you eat them.
- Use toppings with different textures, some crunchy and fresh and a creamy sauce to balance out the pulled pork.
- Use fresh lime juice to add zing to the finished tacos. Bottled juice is less flavorful.
