Ingredients
- Pineapple and any other fruit you’d like such as peaches
- Brown sugar
- Coconut oil
- Vanilla ice cream
- Dulce de leche
- Toasted coconut flakes
Step by Step Instructions
How to grill pineapple
- Preheat the grill to medium-high heat (about 350 – 450 degrees F).
- Remove the rind and stem from the pineapple and cut into 1 inch thick slices. Pour coconut oil over the pineapple and rub brown sugar over the slices and let stand until the grill is fully heated.
- Place pineapple slices on the grill and cook for about 3 – 5 minutes on direct heat. Flip the pineapple slices and let cook for another 3 -5 minutes or until tender, golden, and lightly caramelized.
How to make ice cream sundaes
- Place grilled pineapple slices on plates and top each slice with a large scoop of frozen vanilla ice cream.
- Drizzle with dulce de leche and top with toasted coconut.
- Enjoy immediately.
Can you make this dessert with other fruits?
Pineapple is one of my favorite fruits to grill and it works so well with the toasted coconut for that delicious tropical taste. You can easily make this with other grilled fruits too and it will be just as yummy! Try it with:
- Peaches
- Banana
- Pears
- Melon
- Mango
Top Tips For Grilling Fruit
- It is best to grill firm fruits that are not over ripe. If they are too soft and ripe they won’t hold their shape and can disintegrate.
- Don’t overcook the fruit. If they are overcooked they will become very soft and jammy. You don’t need to cook them through, a couple of minutes on each side is perfect.
- Use brown sugar rather than white to sprinkle over the fruit. It contains more molasses which caramelizes to create a rich depth of flavor.
- Cut the fruit into large pieces so that it’s easier to flip and doesn’t fall through the grates.
Can you grill pineapple ahead of time?
I like to serve the pineapple when it is still warm so that the ice cream melts over it. I like to let it rest for 10 minutes before serving. You can grill the pineapple up to 24 hours before and keep it stored in an airtight container.
