This summer my family and I were planning a trip to Miami, which sadly didn’t happen. However, we can still experience the delicious flavors of the city at home with these grilled chicken skewers with guava BBQ sauce.
Every time I think about Miami, the sweet delicious flavor of guava always comes to mind. In Miami guava is everywhere. From the delicious cuban bake treats like guava pastelitos and masa real to guava mojitos, ketchup and even barbecue sauce!
Food can transport us anywhere in the world through its smell and flavors! That’s why I decided to bring the delicious flavors of my favorite city home with this grilled chicken skewers smothered in the most amazingly sweet and tangy guava sauce. It’s a super easy recipe that’s so simple to make on your Weber Genesis II!

Ingredients
- Chicken breasts
- Red and yellow and green bell pepper
- Onion
- Salt and pepper
- Guava paste
- BBQ sauce
- Garlic
- Lime juice
- Apple cider vinegar
How to make grilled chicken skewers
- Heat outdoor grill to medium-high heat.
- Thread chicken and vegetables alternately onto skewers. Season chicken and vegetable skewers with salt and pepper to taste.
- Place chicken skewers on the grill to cook turning occasionally until charred, about 10-15 minutes.
- In a medium saucepan combine guava paste, barbecue sauce, garlic, lime juice, and vinegar. Bring to a slow simmer and stir until the guava paste has melted and the sauce is smooth, set aside.
- When skewers are almost done, brush with guava barbecue sauce and grill until done.
Top Tips for Grilling
If you are new to grilling, or want to up your grilling game, here are my top tips to create the most delicious food on your Weber grill!
- Always start with a clean grill. Your food is less likely to stick. It also prevents flare-ups and keeps yesterday’s dinner from ruining today’s lunch. It’s easiest to clean the grill when it’s hot.
- Oil the food, not the grate. Oiling the food prevents food from sticking and it adds flavor and helps seasoning adhere to the food.
- Keep the lid down. Using the lid is really important. It limits the amount of air getting to the fire, thus preventing flare-ups, and it helps to cook food on the top and bottom simultaneously.
- Let your food come to room temperature before cooking it on the grill. This will help the meat cook evenly. I like to take whatever I’m cooking out of the fridge 30 minutes before I plan to cook it.
- Caramelization is key. Searing literally develops hundreds of flavors and aromas on the surface of the protein. When meat hits hot cooking grates, it instantly begins caramelizing to get that great, grilled flavor.
- Let the chicken, steak or whatever you are cooking rest before serving. Resting allows the juices to redistribute for the juiciest bite.
Can you make the skewers ahead of time?
These skewers are best served right off of the grill, but that doesn’t mean you can’t get ahead of things. You can thread and season the skewers a day ahead of time and keep them covered in the fridge. You can also make the sauce the day before and just warm it through when you are ready to glaze the chicken.

Recipe Notes and Tips
- If you can’t find guava paste at the store, you can use guava preserves.
- You can use metal or wooden skewers. If using wooden skewers, soak them in water for about an hour before grilling to keep them from burning in the grill.
- Be sure to cook the chicken all the way through. The outside should be slightly charred and have a uniformed white color inside. If you have an instant-read thermometer they should register at 165F.

Grilled Chicken Skewers with Guava BBQ Sauce

- 8-10 skewer sticks
