This delicious chicken sandwich is a great go-to recipe when you are short on time. Made with shredded rotisserie chicken and cooked in escovitch sauce for a rich and flavorful bite that’s ready to enjoy in 20 minutes.
This is the best and easiest chicken sandwich ever! 😋 Whether you have some leftover rotisserie chicken available or you’re just unsure of what to make with it, you’ll have a delicious lunch for the family in less than 20 minutes with just a few simple ingredients. This shredded chicken sandwich is so flavorful everyone will be asking for seconds.
To save time, I used pre-cooked rotisserie chicken and sauteed the chicken in an escovitch sauce (salsa escabeche) made with peppers, onion, tomato sauce, and granulated chicken bouillon to enhance the flavors. This recipe can also be made with rotisserie chicken made from scratch.
This is a total favorite in my house, and I’m sure it will be in yours too!

Ingredients
- Avocado Oil – I used avocado oil but you can use olive oil or vegetable oil if that is what you have on hand.
- Granulated Chicken Bouillon – I used the granulated kind because it will dissolve easily into the food. You can use the tablet as well but you’ll need to dissolve it in a bit of warm water before adding it to the skillet.
- Bell Pepper – Any color pepper can be used, whether you choose green, red, or like I do, use a mix of different colors.
- Red Onion – If red onion is not available, you can use white onion, although red is often best for meals such as sandwiches or salads for its spicier taste.
- Tomato Sauce – This is used as part of the chicken seasoning. You can use any brand for this recipe.
- Shredded Rotisserie Chicken – You can buy this pre-cooked and shred it yourself. You can also make rotisserie chicken from scratch either in an oven, air fryer, or slow cooker, and break apart pieces of the chicken by hand.
- ColeSlaw – For this recipe, I used pre-made coleslaw, which is a great add-on to sandwiches for its rich flavor and creamy texture. You can also make it on your own to modify it to your liking.
- Hamburger Potato Buns – I like to use potato buns for their delicious flavor and smooth texture. However, you can use any bun such as brioche, ciabatta, or plain.
How to make a shredded rotisserie chicken sandwich
- In a medium-sized skillet pan, heat the oil over medium-high heat.
- Combine the chicken bouillon, peppers, onion, and tomato sauce in a bowl to prepare for the next step.
- Sauté chicken bouillon, peppers, onion, and tomato sauce until the onion it’s translucent, about 5-7 min. Add water and stir.
- Mix in chicken and stir to combine. Let cook for an additional 5 minutes and remove from the pan.
- Build the sandwich with a layer of chicken and top it with coleslaw, along with any other ingredients.
- Serve and enjoy!
