- In a medium bowl, mix peaches, onion, tomato, jalapeño, cilantro and lime juice.

You can use either or, but I prefer to use canned peaches. Drain them well to get rid of any excess moisture, and then just chop them up. I find them to be sweeter than fresh peaches and they are so much more convenient. If you use fresh, make sure they are nice and ripe.
This salsa can easily be made a day or two ahead of time and kept covered in the fridge. I like to let it sit for at least an hour before serving to really let the flavors develop.
I use one jalapeno in this peach salsa recipe, so while it has a bit of a kick, it is not too overpowering. If you like your salsa on the spicier side, feel free to add in another one, or use a hot red chili. Similarly, if you don’t like spicy foods, you can leave it out altogether.
