Camarones Guisados is one of my favorite Dominican seafood dishes, it’s so rich and flavorful but light and healthy at the same time.
Made with just a few simple ingredients, this delicious stewed shrimp recipe is ready to serve in just 30 minutes.
Loaded with shrimp and fresh vegetables, it’s low in calories, carbs, and fat, as well as being gluten-free, but it is more than satisfying, thanks to all of those tasty seasonings.

Ingredients
- Jumbo Shrimp
- Salt and Pepper
- Oregano
- Oil
- Red Onion
- Bell Pepper
- Garlic
- Vegetable Bouillon
- Tomato Sauce
How to make camarones guisados (stewed shrimp)
- Season shrimp with oregano, salt and pepper. Set aside.
- In a large saute pan, heat oil over medium-high heat. Add onion, peppers, garlic and granulated bouillon. Cook until onions become translucent, about 2 minutes.
- Stir in tomato sauce and let cook for another 2 minutes. Add the shrimp and stir to combine. Cook for about 15 minutes or until shrimp is cooked through.
- Squeeze fresh lime juice and serve warm.
Frequently Asked Questions
I much prefer to make Camarones Guisados with the tails still on the shrimp. They add so much more flavor to the stew and I love how they look too. If you prefer, when you devein the shrimp and remove the shells, you can also remove the tails.
Generally, fresh seafood is best, but frozen shrimp are so much more convenient, and they will work well in this recipe. If using frozen shrimp, make sure that they are fully thawed before seasoning them and adding them to the stew.
A bowl of this stewed shrimp recipe is great by itself, but I love to serve it over rice, for a nice filling family meal, and of course, a side of tostones is never a bad idea! To keep it low carb, cauliflower rice works great too.
Recipe Notes and Tips
- Camarones Guisados is best served straight away, but any leftovers will keep well in the fridge for up to 3 days and can be reheated on the stovetop.
- You can easily add other veggies to this stewed shrimp. Carrots and mushrooms are both great additions.
- Take care not to overcook the shrimp, as it can become chewy.
