I love overnight oats! It is the simplest, easiest, most delicious, and most filling breakfast you could have. You can combine any ingredients you want to create amazing delicious flavors, put it together in just 5 minutes and leave it in the fridge overnight so that it’s ready to eat the next morning when you wake up.
This recipe combines all the flavors of classic french toast fused with oatmeal directly into a jar. It truly cannot get better than that!
Plus, it is good for you, with added protein! If that is not a breakfast of champions I don’t know what is!

A jar of these cinnamon overnight oats will keep well in the fridge for up to 3 days. Whenever I make these, I always make a batch so I don’t have to think about breakfast for a few days!
Yes, it’s super easy to make this breakfast totally plant based. Simply skip the whipped cream topping. In it’s place, you can use coconut whipped cream if you like.
Similarly, if you are not vegan, you can use honey in place of the maple syrup and these overnight oats can also be made with dairy milk, or any other plant based milk.
I like to use quick oats for my cinnamon overnight oats so they get nice and soft. You can use old-fashioned rolled oats for a slightly firmer texture. I avoid steel cut oats which can be too chewy.

Do you put 1tsp of vanilla extract into the jar with everything else or is it a different type of vanilla? I’ve never used vanilla extract without cooking it before.

Yes, it’s regular vanilla extract and you add it right into the jar with everything else.
Even though it’s often used in baking, it works really nicely in no-cook recipes like overnight oats and adds a subtle sweetness. Hope you enjoy it!
