Spicy, cheesy and absolutely delicious, these super easy buffalo chicken rolls are the perfect snack to share with your guest on Super Bowl night.
One of my favorite things to do every year is host a Super Bowl party. Nothing big. Just a small get together with a few friends and family.
What is interesting about us is that besides my 7 year old son, who is a sports fanatic, none of us really follow or know the game at all. Yet, we pick a team we’ll like to see win and root for it all night. My son and his cousins really enjoy the game.
For me though, the Super Bowl is just another opportunity to share delicious food with those I care about, and of-course, the half-game show. I always enjoy that part. Remember that time Missy Elliott came on half way through Katy Perry’s performance during the 2015 Super Bowl?
That was one epic moment! It transported me right back to high school and suddenly, I became someone complete unknown to both of my children. I jumped up from my chair, and began singing and dancing. The singing and dancing is not the surprising part. I do that all the time. I am Dominican after all. Oh, it was the rapping that caught them of guard.
Their faces turned red, eyes wide open, mouths dropped to the floor. I don’t know if they were amazed or embarrassed. Probably a little bit of both.
As I gave the performance of my life completely invested in my *cough* rapping skills *cough*, my son turns his head towards my husband and I hear him say, “who is that?,” referring to Missy.
Sigh.
And it was over. My outburst of complete excitement and Beyonce skills disappeared in a second with the realization that I. am. old.
So, I pulled myself together and got back to my other favorite part of Super Bowl night: the food. I’m sure my kids appreciated that.
For this type of gathering, I love making dishes that are small. Food that you can grab and with just a couple of bites eat it all. Something like these buffalo chicken rolls, or these Mini Bacon Corn Muffins, or the most gooey and scrumptious Queso Fundido with Chorizo you’ll ever eat.
Throwing a fun Super Bowl party is so easy. Simply, invite some friends. Make a few small delicious dishes. Set up a football theme table. Place the food there. Buy some beer (juice boxes for the kids and stuff). Put the game on TV. Have a loud karaoke session singing along Missy Elliott during the half time show. Have fun, eat and enjoy.
To make these buffalo chicken rolls, I used a canned pizza dough, pre-cooked chicken breast, buffalo wing sauce, mozzarella and cheddar cheeses, and chopped scallions. I added one tablespoon of butter to the buffalo wing sauce to cut down the heat a little bit. I didn’t want the rolls to be too spicy, so that the kids could eat them. But, still with a nice level of heat.
Combine the butter and buffalo sauce in a small pot over medium heat, until the butter has completely melted. Add the chicken, which you should have previously shredded, and stir to combine well. Roll out the dough in a flat working surface. Spread the chicken over the dough. Sprinkle both cheeses and chopped scallions over the top. Roll the dough lengthwise and cut into one inch pieces. Place flat on a greased cookie sheet and bake at 350 degrees for about 12-15 minutes. Take it out of the oven and let it rest for about 5 minutes.
Serve with your favorite dipping sauce.
Easy Buffalo Chicken Rolls

- 1 roll pizza dough , store bought
- 1 tablespoon butter
- 3/4 cup buffalo sauce
- 2 cups chicken breast , cooked and shredded
- 1 cup mozzarella cheese , shredded
- 1 cup cheddar cheese , shredded
- 1 tablespoon scallions , chopped
Instructions
- Preheat oven to 350 degrees. Spray a baking sheet with nonstick spray and set aside.
- In a small pot over medium heat, melt butter and mix with buffalo sauce. Stir in chicken until well combined. Remove from heat.
- Roll dough on a flat working surface. Spread the chicken over the dough. Sprinkle mozzarella, cheddar and scallions. Carefully, roll the dough lengthwise.
- Slice into 1 inch slices and place flat on the baking sheet.
- Bake for about 12-15 minutes. Remove from he oven and let it rest for about 5 minutes.
- Serve warm.
