    Cherry Pineapple Mojito

    Cherry Pineapple Mojito ~ A fun and refreshing cocktail made with limes, pineapple juice, rum, mint leaves and 7UP® Cherry.

    Everyone who knows me knows that I love fruity cocktails. Mojito is my favorite cocktail of all because of its versatility when it comes to choosing flavors. You can really make any flavor mojito you’ll like and it will always end up being a pretty good cocktail.

    The best part is that you can also make it by the pitcher to share with friends at your next gathering. And it will only take you about 10 minutes max!

    Mojitos are a Cuban cocktail made of rum, sugar, lime juice, Seltzer water, and mint. I love this cocktail because, in addition to these five ingredients, you can add any other fruit juice and create a completely different cocktail every time.

    You can also get creative and substitute the Seltzer water for your favorite carbonated drink for a mix of flavors like I did with this recipe by using 7UP Cherry. Isn’t that a fun idea?

    It came to me after visiting my local ShopRite store. I picked up all the ingredients for this Mojito there and headed home to make this cocktail because I was so excited to try it. It was so worth it!

    Making it is super easy. Simply muddle the lime and mint in a mason jar to release the flavors. Add the sugar, pineapple juice, rum, 7UP Cherry, and ice. Garnish with lime, a piece of fresh pineapple and a mint sprig.

    INGREDIENTS

    • 4 mint leaves plus more for garnish
    • Two lime slices plus more for garnish
    • 1 teaspoons sugar
    • ½ cup pineapple juice
    • 3 oz white rum
    • ½ cup 7UP Cherry
    • Ice
    • Pineapple chunks for garnish

    INSTRUCTIONS

    • In a cocktail glass or mason jar, add mint leaves, sugar and lime juice.
    • Muddle together until the mint leaves are bruised to release the mint flavor. Then, add the pineapple juice and rum. Mix with a spoon until sugar has dissolved.
    • Add 7UP Cherry and ice.
    • Garnish with lime slices, pineapple chunks and a mint sprig. Serve immediately.
