    Tropical Fruit Yogurt Parfait with kiwi, mango, granola and yogurt- Smart Little Cookie

    This tropical fruit yogurt parfait is delicious and the perfect on-the-go easy breakfast or snack. It’s made with mango, kiwi, granola and toasted coconut vanilla flavor yogurt.

    Finding quick and healthy options for breakfast or snacks is often challenging, especially when you are constantly busy. Sometimes is even challenging remembering to eat breakfast or snack.

    As anyone who works from home would tell you, one of the things that are easier to forget when you are working is remembering to eat and hydrate. Raise your hand if this happens to you. 🙋🏾‍♀️

    Thankfully, my daughter is always paying attention and makes it her business to constantly remind me that I need to take a break to eat or even to step outside and get some fresh air.

    One of the things I started doing this summer, is that every day we would take a break and step out for a little walk together. This helps me step away from the computer for a bit, get out and get active.

    I also started coming up with quick and healthy snack options to keep in hand.

    One of my favorite snacks is yogurt and this tropical fruit yogurt parfait is absolutely delicious. It is great for breakfast or as a snack to take with you on-the-go.

    My yogurt of choice is Light & Fit! Light & Fit Original Greek yogurt is a delicious, nutritious, and convenient option to help you stick to your healthy routine. With a variety of fruity and indulgent flavors, 80 calories, and 12g of protein per 5.3oz serving, you can enjoy it every day!

    My favorite flavor is toasted coconut vanilla which goes perfectly with the tropical fruit in this parfait. It literally tastes like you are sitting on an island somewhere in the tropics. It's that fresh!

    Mango and Kiwi where my fruits of choice for this parfait, but you can also use pineapple, mandarins, papaya or even guava!

    How to make a yogurt parfait

    When making a yogurt parfait is important to layer the ingredients appropriately. First, add a layer of the yogurt. Then, add in an even layer of the fruit in proportion with the yogurt. Keep adding even layers in the same order until you reach the top of the container.

    If you'll be eating the parfait immediately, you add the granola in between layers as well. But if you'll be reserving the parfait to eat layer, I suggest you add the granola only as a topping when ready to eat so that the granola doesn't become soggy.

    INGREDIENTS

    • 2 5.3 oz Light & Fit Greek yogurt, toasted coconut vanilla flavor
    • 2 kiwis peeled and cubed
    • ½ mango peeled and cubed
    • ½ cup oats and honey granola
    • 1 tablespoon toasted coconut flakes

    INSTRUCTIONS

    • Add a layer of yogurt to the bottom of the mason jars, about 1 tablespoon.
    • Then add a layer on the mango and kiwi followed by the granola.
    • Add another layer of the yogurt.
    • Top with more fruit, granola, and the toasted coconut flakes.
