Rich, creamy, sweet and spicy Chai Rice Pudding infused with Oregon Chai® Tea Latte Concentrate.

One of the things I enjoy the most about fall is the food of the season. There is something so cozy and comforting about the fall flavors.
I mean, think about all the baking, warm soups, apples, everything pumpkin and most of all, the spices!
One of my favorite desserts to make during this time of year is rice pudding.
My grandmother used to make it all the time. For me, rice pudding is very reminiscent of family and comfort. It is one of those desserts I make when I feel like enjoying a little “me time” with a sweet treat.
To add a little bit of fall flavors of the season, I decided to give my rice pudding a bit of a twist and infuse it with a little chai tea latte flavor.
To make this rice pudding, I used my grandmother’s simple recipe and just swapped half of the milk called for in the recipe with Oregon Chai Tea Latte Concentrate that I purchased at my local Walmart. Oregon Chai can be incorporated into many of your fall recipes; giving it a delicious chai flavor.

MAKING THE RICE PUDDING
To make the rice pudding, I simply added rice, cinnamon, salt, and water into a large pot. Let it simmer until the rice becomes tender and has sucked up all of the water. Stir occasionally to avoid sticking at the bottom of the pot.
Then, add the Oregon Chai Tea Latte Concentrate, milk, sugar, butter and raisins. Continue to cook until it reaches a pudding-like consistency. Turn off the heat and let it cool down for a little bit.
Serve slightly warm and top with almond slices.
Chai Rice Pudding

- ½ cup rice
- 1 cinnamon stick
- 3 cups water
- ½ teaspoon salt
- Âľ cup Oregon Chai Tea Latte Concentrate
- Âľ cup evaporated milk
- ½ cup sugar
- 1 tablespoon butter
- ÂĽ cup raisins
- sliced almonds for garnish (optional)
Instructions
- In a large pot over medium heat, place the rice, cinnamon stick, salt and water. Let it simmer until rice is tender, about 20 minutes. Stir the pot occasionally to keep the rice from sticking.
- Add the Oregon Chai Tea Latte Concentrate, milk, sugar and butter. Stir well to combine. Once it comes to a boil, add the raisins.
- Let it simmer until it reaches a pudding-like consistency. Turn off the heat and cover to let cool down before serving.
