- 8 ounces fresh ginger root (about 225 g), peeled and lightly crushed
- 4 ½ cups water (1.06 liters)
- 1 cinnamon stick
- Sugar or honey, to taste
Lightly crush the ginger using a wooden spoon or the side of a knife to release its flavor.
In a medium saucepan, heat the water over medium-high heat until it begins to boil.
Add the ginger and cinnamon stick. Reduce the heat to medium-low and let it simmer for about 10 minutes.
Remove from heat and strain the tea through a fine mesh strainer into cups.
Sweeten to taste with sugar or honey before serving.
