Ingredients

  • 1 cup vegetable oil (for frying)
  • 1 lb cured longaniza

Instructions

On the Stovetop

  • Heat oil in a small saucepan or caldero, over medium-high heat.
  • Cut longaniza into 1-inch pieces.
  • Fry the longaniza for about 4 minutes, or until golden brown, rotating to cook equally on all sides.

On the Air Fryer

  • Set the air fryer to 400 degrees.
  • Place the longaniza pieces in the air fryer. Cook for about 7 minutes, or until golden brown, rotating halfway through.

Serve:

  • Remove them from the oil or the air fryer and let them rest on a plate lined with a paper towel to absorb excess grease.
  • Serve warm with tostones and a lime wedge.

Notes

  • Oil splatter protection: Longaniza has a high-fat content, so use a splatter screen to avoid hot oil popping when frying.
  • Choosing longaniza: Look for Dominican pork sausage that is cured and seasoned for the most authentic flavor.
  • No air fryer? No problem! You can also bake longaniza in the oven at 400°F for about 12-15 minutes.
