Beet, Carrot, and Orange Juice

- 6 cups freshly squeezed orange juice (1.4 L), from about 8 to 10 oranges
- 2 medium carrots (about 140 g), roughly chopped
- 1 large beet (about 200 g), peeled and roughly chopped
- 2 tablespoons honey (40 g), optional
Add the orange juice, carrots, and beet to a high-speed blender. Blend on high until completely smooth, about 60 seconds.
Pour the mixture through a fine mesh strainer into a pitcher, pressing gently to extract as much liquid as possible.
Stir in the honey, if using, and mix until fully dissolved.
Refrigerate until well chilled.
Serve cold.
- If using a juicer, feed the carrots and beets through first, then stir in the freshly squeezed orange juice and honey before chilling.
- For a smoother juice, strain it twice or use a cheesecloth.
- Freshly squeezed orange juice makes a big difference here. Bottled works in a pinch, but fresh is worth it.
- The beet will stain. Use a cutting board you don't mind getting colorful, and rinse your blender right after.
