Ensalada de Aguacate (Dominican Avocado Salad)

A fresh and simple Dominican ensalada de aguacate made with tropical avocado slices topped with a tangy onion vinaigrette. The perfect side dish for traditional Dominican meals.

Ingredients

  • ¼ small red onion thinly sliced
  • 1 tablespoon extra virgin olive oil 15 ml
  • 3 tablespoons apple cider vinegar 45 ml
  • Salt and pepper to taste
  • 2 tropical avocados
  • 1 teaspoon fresh parsley roughly chopped (1 g)

Instructions

  • In a small bowl, combine the red onion, olive oil, apple cider vinegar, salt, and pepper. Let sit for 5–10 minutes, until the onion begins to soften and turn pink.
  • Peel and slice the avocados. Arrange the slices on a serving platter.
  • Pour the onion dressing evenly over the avocado slices. Sprinkle with parsley.
  • Serve immediately as a side dish.

Notes

  • Cut the avocado as thin or thick as desired. You may also cube it if preferred.
  • Best served fresh for optimal texture and flavor.
