Queso Fundido with Chorizo
This ooey, gooey melted cheese with chorizo, tomatoes, cilantro, scallions, jalapeños, and a little tequila is the perfect party appetizer.

- 10 oz pork chorizo
- 2 jalapeños, seeded and finely chopped
- 1/4 cup tequila
- 8 oz Monterey Jack cheese, shredded
- 8 oz Cheddar cheese, shredded
- half of a small tomato, chopped
- 1 scallion, chopped
- 1 tablespoon cilantro, chopped
- tortilla chips, for dipping
Preheat oven to 375 degrees.
Heat a medium-size skillet over medium-high heat. Add the chorizo and chopped jalapeño.
Cook, stirring, until the chorizo has browned, about 5 minutes. Add tequila to deglaze the skillet and let it reduce. Turn off the heat. Remove half of the chorizo and reserve.
In a medium bowl, mix both kinds of cheese. Add cheese to the skillet right over the leftover chorizo.
Add the reserved chorizo on top and place skillet in the oven. Bake until the cheese has melted, and the edges begin to brown, about 10-15 minutes.
Serve immediately with a side of tortilla chips.
