Mangu (Dominican Mashed Plantains)

Creamy, rich and delicious, mangu is one of my favorite plantain recipes. Dominica mashed plantain is super simple to make, but is full of flavor. Serve as part of a breakfast, or as a side dish.

Green Plantains

1. Peel the plantains and cut lengthwise, then divide each half into two.

PREP THE PLANTAINS

2. Boil plantains in salted water until tender.

BOIL

3. Drain the plantains and mash them with a fork until smooth. Add butter and water, then continue to mash and mix until no lumps remain.

MASH THE PLANTAINS

1. In a small bowl combine onions, vinegar and salt. Let sit for about 5 minutes.
