– rice – water – cinnamon stick – salt – evaporated milk – sugar – pumpkin pie spice – pumpkin puree – golden raisins (optional) – chopped pecans (optional)

Pumpkin Spice Rice Pudding (Pumpkin Arroz con Leche)

INSTRUCTIONS

1. Place the rice, water, cinnamon stick and salt in a large pot over medium heat. Let it simmer until rice is tender, about 20 minutes. Stir occasionally to avoid sticking.

2. Add the milk, sugar, pumpkin pie spice and pumpkin puree. Stir to combine. Once it comes to a boil, add the raisins.

3. Let simmer until it reaches a pudding like consistency, about 10-15 minutes. Turn off the heat and cover to let cool down.
