Chorizo

Key Ingredient

THE RECIPE

– canola oil – Spanish onion chopped – red bell pepper chopped – green bell pepper chopped – garlic cloves minced – carrot cubed – cured Spanish chorizo – red kidney beans canned – tomato sauce – chicken bouillon MAGGI® – dried oregano – black ground pepper – salt – saffron – apple cider vinegar – cups water – parsley roughly chopped

1. In a large dutch oven, heat olive oil. Add onions, peppers, garlic and carrots to the pot and saute until tender, about 4-5 minutes.

SAUTE

2. Add chorizo and beans until heated through. Stir in tomato sauce, chicken bouillon, oregano, salt, black pepper, saffron, vinegar and water.

ADD THE CHORIZO & BEANS

3. Bring to a simmer and cook for about 15 minutes. About 1 minute before it’s ready, stir in parsley.

SIMMER

4. Serve with crusty french bread and a garnish of parsley if desired.
