Fried Rice (Dominican Chofán)

Ingredients

  • 3 tablespoons vegetable oil
  • 1 cup cooked ham cubed
  • 1 carrot cubed
  • ¼ cup red onion chopped
  • ¼ cup red bell pepper chopped
  • 2 cup frozen peas thawed
  • 2 cup sweet corn
  • 4 cups white rice cooked
  • 1 boneless skinless, chicken breast, cooked and cubed
  • 4 tablespoons soy sauce
  • 2 eggs scrambled
  • 2 tablespoons green onions chopped (plus more for garnish)

Instructions

  • Heat the oil over high heat in a wok (or a big pot, if you don't have a wok). Add the ham and cook stirring occasionally for about 4 minutes. Add the carrots and stir; let cook for about for 1 minute.
  • Add the onion and peppers and stir for about 2 minutes. Add rice, peas and corn. Mix well until there are not clumps of rice left. Add the soy sauce and mix well.
  • Add cooked chicken, eggs and green onions. Mix until well combined.
  • Remove from the heat and serve. Garnish with green onions.
