Cherry Mojito

With just the right amount of sweetness, this refreshing and fruity Cherry Mojito is the perfect cocktail for any special gathering. The best way to enjoy an icy glass full of cherries and mint.

Ingredients

  • 6 mint leaves
  • 6 cherries, pitted
  • 2 limes, sliced
  • 4 ounces cherry simple syrup
  • 2 ounces white rum
  • 8 ounces Prosecco
  • ice cubes

Instructions

  • Combine the mint leaves, cherries and lime slices in a sturdy glass. Crush the ingredients using a muddler or wooden spoon to release their flavors.
  • Add the cherry simple syrup and rum. Pour in the prosecco slowly until glass is almost filled. Add ice and top with a little mint and a cherry to garnish.
  • Serve immediately.

Notes

  • Do not press the mint too much or you may risk the mint leaves becoming bitter. 
  • If you’re interested in making this recipe but are refraining from alcohol, you can simply omit the rum and switch the Prosecco with seltzer water. I promise it will taste just as good!
  • For an added kick of flavor, try adding half a cup of flavored sparkling water or club soda instead of Prosecco.
