Ingredients

  • 2 lbs jumbo shrimp cleaned and deveined
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon dried oregano
  • 2 tablespoons vegetable oil
  • ½ cup red onion sliced
  • ½ cup bell pepper sliced
  • 1 clove garlic minced
  • ½ teaspoon granulated vegetable bouillon
  • ½ cup tomato sauce

Instructions

  • Season shrimp with oregano, salt and pepper. Set aside.
  • In a large saute pan, heat oil over medium-high heat. Add onion, peppers, garlic and granulated bouillon. Cook until onions become translucent, about 2 minutes.
  • Stir in tomato sauce and let cook for another 2 minutes. Add the shrimp and stir to combine. Cook for about 15 minutes or until shrimp is cooked through.
  • Squeeze fresh lime juice and serve warm.

Notes

  • You can use fresh or frozen shrimp. If using frozen shrimp, be sure to thaw it completely before cooking.
  • Camarones Guisados is best served straight away, but any leftovers will keep well in the fridge for up to 3 days and can be reheated on the stovetop.
  • You can easily add other veggies to this stewed shrimp. Carrots and mushrooms are both great additions.
  • Take care not to overcook the shrimp, as it can become chewy.
