Mango Raspberry Yogurt Popsicles

These refreshing Mango Raspberry Yogurt Popsicles are a delicious cold treat bursting with summer flavors. The perfect kid-friendly frozen treat to enjoy on a hot summer day.

Ingredients

  • 2 ½ cups raspberries, pureed
  • 2 ½ cups mangoes, peeled and sliced, pureed
  • 2 tablespoons lime juice, freshly squeezed
  • 2 tablespoons honey, divided
  • 3/4 cup coconut greek yogurt

Instructions

  • In a blender, puree raspberries with one tablespoon honey then set aside. Clean blender, puree sliced mangoes with one tablespoon honey and lime juice, set aside.
  • Layer the popsicles as follows: 2 teaspoons raspberry puree, one teaspoon yogurt, two teaspoons mango puree and repeat.
  • Tap the mold on the counter to make sure all of the layers settle. Use a popsicle stick to drag vertically from the bottom to the top of the mold a few times to create a swirled pattern.
  • Gently tap the mold on the countertop to remove any air bubbles. Insert popsicle sticks, and then freeze for at least 6 hours, or overnight.
