Scrambled Eggs with Ham and Cheese

These scrambled eggs with ham and cheese are soft and fluffy with the delicious smoky flavor of ham and gooey cheese.

Ingredients

  • 1 tablespoon butter
  • 6 eggs
  • ¼ pound smoked ham, cubed
  • Salt & pepper, to taste
  • ¼ cup shredded mild cheddar cheese
  • 2 tablespoons shredded mozzarella cheese
  • Chives, chopped (optional)

Instructions

  • Melt butter in a medium-sized nonstick skillet over medium-low heat.
  • In a bowl crack the eggs and whisk. Add the ham and stir to combine. Season with salt and pepper.
  • When the butter starts bubbling, add the eggs to the skillet.
  • As the edges start to set, gently stir around the edges using a rubber spatula to form soft curds. Add the cheese and continue stirring occasionally until cooked, about 5 minutes.
  • Serve warm with a side of avocado and toast. Garnish with fresh chives if desired. 

Notes

To store leftovers, refrigerate for up to 4 days. To reheat, place on a microwave-safe bowl and cover with a wet paper towel. Microwave for about 20 seconds. Stir with a fork and continue to microwave in 20-second intervals until the eggs are hot and ready to be eaten.
