Butter Cookies (Mantecaditos)
These tasty butter cookies (mantecaditos) are super simple to make even for the amateur baker. They are perfect to enjoy with friends served alongside a warm cup of coffee.

- 2 cups all-purpose flour
- 1 teaspoons baking soda
- ¼ teaspoon salt
- ¾ cups sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon lime zest
- ¾ cup unsalted butter (1 ½ sticks)
Preheat oven to 350°. Line a baking sheet with parchment paper.
In a food processor, combine flour, baking soda, salt, sugar, egg, vanilla extract, lime zest, and butter.
Pulse until the mixture starts to form into small lumps.
Cover the dough with plastic wrap and refrigerate for 10 minutes.
Form small balls with the dough of approximately 1 inch in diameter and press down slightly to flatten a little bit. Place in the baking sheet about two inches apart from each other.
Bake for about 18 minutes or until the edges turn slightly golden. Remove from the oven and cool on a rack for about 30 minutes.
- Be sure to refrigerate the dough before baking the cookies or they can spread too much.
- These cookies take 18 minutes to bake. Check them at around 15 minutes as ovens can run hotter or cooler.
- The cookies are done when they are set and the edges are slightly golden brown.
