Butter Cookies (Mantecaditos)

These tasty butter cookies (mantecaditos) are super simple to make even for the amateur baker. They are perfect to enjoy with friends served alongside a warm cup of coffee.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoons baking soda
  • ¼ teaspoon salt
  • ¾ cups sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon lime zest
  • ¾ cup unsalted butter (1 ½ sticks)

Instructions

  • Preheat oven to 350°. Line a baking sheet with parchment paper.
  • In a food processor, combine flour, baking soda, salt, sugar, egg, vanilla extract, lime zest, and butter.
  • Pulse until the mixture starts to form into small lumps.
  • Cover the dough with plastic wrap and refrigerate for 10 minutes.
  • Form small balls with the dough of approximately 1 inch in diameter and press down slightly to flatten a little bit. Place in the baking sheet about two inches apart from each other.
  • Bake for about 18 minutes or until the edges turn slightly golden. Remove from the oven and cool on a rack for about 30 minutes.

Notes

  • Be sure to refrigerate the dough before baking the cookies or they can spread too much.
  • These cookies take 18 minutes to bake. Check them at around 15 minutes as ovens can run hotter or cooler.
  • The cookies are done when they are set and the edges are slightly golden brown.
