Salami Guisado (Stewed Dominican Salami)

- 2 tablespoons vegetable oil
- 1 cup red onion, sliced
- 1 cup bell pepper, sliced
- 1 teaspoon granulated chicken bouillon
- 1 teaspoon dried oregano
- ½ cup tomato sauce
- 16 oz Dominican Salami, chopped
- 1 cup water
- Salt and pepper to taste
- 1 teaspoon freshly squeezed lime juice
In a saute pan, heat vegetable oil over medium high heat. Add onion and bell pepper. Cook until the onion cooks through and becomes translucent, about 2 minutes.
Stir in chicken bouillon and tomato sauce. Cook for 3 minutes.
Add salami and stir to combine. Continue to cook for an additional 5 minutes.
Stir in the water and let simmer for about 10 minutes or until the sauce thickens.
Season with salt and pepper to taste.
Squeeze fresh lime juice before serving.
- You can easily add additional veggies to this dish if you like. Carrots and mushrooms both work great.
- If making ahead of time, let the salami guisado cool completely before storing.
- Chop the salmi into similar sized pieces so that it cooks through evenly.
