    Queso Fundido with Chorizo

    Queso Fundido with Chorizo ~ This ooey, gooey melted cheese with chorizo, tomatoes, cilantro, scallions, jalapeños, and a little tequila is the perfect party appetizer for any occasion.

    Cinco de Mayo is approaching and what better party appetizer than a delicious Queso Fundido with Chorizo to start up the menu.

    What is Queso Fundido?

    You may ask. I will give you the same answer I gave my friends who asked that question. It’s simply melted cheese made with a little tequila and, in this case, topped with chorizo.

    The cheese pulls and stretches beautifully, and the chorizo and jalapeños add the perfect spicy kick. You can add a little tequila for enhanced flavor. This step is optional and the queso fundido will taste just as good weather you add tequila or not. But are you really going to skip the tequila? I added the tequila because why not?

    What to Serve with Queso Fundido?

    You can serve this queso fundido recipe with a big basket of tortilla chips. This appetizer also pairs well with a refreshing grapefruit lime margarita, a spicy mango michelada or a nice cold beer.

    How to Make Queso Fundido with Chorizo?

    To make the queso fundido with chorizo recipe, preheat oven to 375 degrees. Heat a medium-size skillet over medium-high heat. Add the chorizo and chopped jalapeño to the skillet. Cook, stirring, until the chorizo has browned, about 5 minutes. Add tequila to deglaze the skillet and let it reduce. Turn off the heat. Remove half of the chorizo and reserve.

    In a medium bowl, mix Monterey Jack and Cheddar cheese. Add cheese to the skillet right over the leftover chorizo. Add the reserved chorizo on top and place skillet in the oven. Bake until the cheese has melted, and the edges begin to brown, about 10-15 minutes.

    Remove from the oven and top with tomato, scallion, cilantro, and sliced jalapeños. Serve with tortilla chips.

    Imagine yourself placing this dish at the table for your Cinco de Mayo fiesta, accompanied by a side of tortilla chips. I tell you, I’d think about it twice before I decided to share. But if I did, I’m sure it wouldn’t last 5 minutes on the table.

    INGREDIENTS

    • 10 oz pork chorizo
    • 2 jalapeños, seeded and finely chopped
    • ¼ cup tequila
    • 8 oz Monterey Jack cheese, shredded
    • 8 oz Cheddar cheese, shredded
    • half of a small tomato, chopped
    • 1 scallion, chopped
    • 1 tablespoon cilantro, chopped
    • tortilla chips, for dipping

    INSTRUCTIONS

    • Preheat oven to 375 degrees.
