    Holiday Detox Green Coconut Pomegranate Smoothie ~ A healthy green smoothie with refreshing coconut water and sweet pomegranate - perfect for body detox after the holidays.

    Whew! Another holiday season gone and with it all the cookies and pasteles from abuela.

    It's the beginning of a new year and if you are anything like me you are due for a much needed holiday detox.

    Thank goodness for this delicious green smoothie. It will bring you life in the form of a sweet refreshing drink and make you forget that it's winter because unfortunately, our odd and confusing(?) period of warm weather during the holidays has officially ended. *cries real tears*

    I really thought this would be the first time we would go an entire winter without any snow. But, with the way it's beginning to feel, I'm not so sure anymore. That is alright though because I'll be sipping on my green coconut pomegranate smoothie, and dreaming of white sand and blue turquoise waters all winter long.

    I really like drinks that remind me of my Caribbean origins such as this Healthy Pineapple and Baby Spinach Smoothie. Yum!

    I have to be honest and confess that with all the excitement of the holidays and the unusual warm weather in New York, I got a little carried away and ate a bit too many pasteles. My body is now feeling it. As a result, I'm now working my way back to normality.

    The best thing about this smoothie is that it tastes so good, you won't even miss all the delicious holiday food.

    Making healthier choices is not so bad, especially if they taste this good.

    INGREDIENTS

    • 1-2 cups baby spinach
    • ½ of one apple
    • ¼ cup pomegranate seeds
    • 1 cup coconut water
    • 1 tablespoon honey
    • 1 cup ice

    INSTRUCTIONS

    • Blend all ingredients together until smooth. Serve in a large glass or mason jar.
    • Top with pomegranate seeds and enjoy!
